My Aunt Marti cooked this for me when I was a teenager and I got the recipe from her.  It has always been a big hit at my house, especially the chocolate lovers in the family.  It’s real simple to make.

Mississippi Mud Cake

1 – cup shortening

1/3 cup cocoa

1-1/2 cups plain flour

1 – cup chopped nuts (optional)

4 – eggs

2 – cups sugar

3 tsp. vanilla

1/4 tsp. salt

1 bag miniature marshmallows

Pre-heat oven to 300.  In a mixing bowl cream the shortening, eggs, and sugar.  Beat well.  Sift the flour, cocoa, and salt and add to the mixture in the mixing bowl.  Add the vanilla and nuts and mix well.  Pour the mixture into a long cake pan and bake in the oven for 40-45 minutes.  Right after taking the cake from the oven pour 1 bag of miniature marshmallows over the hot cake.

Icing:

1/3 cup of cocoa

1 box of powdered sugar

1 stick of melted butter

1/2 cup of evaporated milk

1 tsp. vanilla

1 cup chopped nuts (optional)

You do not want to make the icing until the cake is done and the marshmallows are on top of it.  It solidifies really fast.  Sift the cocoa and powdered sugar into a mixing bowl.  Add the melted butter, evaporated milk, vanilla, and nuts.  Mix well.  Pour over the marshmallows on the cake.  Give it about 10 minutes for the icing to set.  Enjoy!
